Winemaking Notes.

The 2016 Blanc de Blancs marks the first release of Haliotide and depicts a pure maritime expression of this vineyard site's proximity to the Pacific. This cuvee is composed of 100% Chardonnay from Stolo Vineyards. After fermentation in nuetral oak barrels it was bottled and aged for 44 months en tirage before being riddled and disgorged by hand, without dosage.

 
 

Tasting Notes.

Fresh aromas of crushed oyster shell, sea air, lemon zest, and a hint of brioche. A fine-textured mousse leads to notes of citrus, green apple, and wet stone, with a bright salinity on the finish.

 

Vineyard Notes.

Stolo Vineyards is located less than 3 miles from the ocean, just south of Big Sur and west of the Santa Lucia mountain range in Cambria, California. Lucas and Nicole have helped to plant and farm this vineyard since 2010. The powerful cooling influence of the Pacific Ocean through fog and wind make this an extremely cool climate grape growing region. The ocean-influenced climate and ancient seabed soils of this site show incredible promise for producing complex, age-worthy sparkling wines.
