Winemaking Notes.
The 2019 Extra Brut Rosé is composed of 100% Pinot Noir from Topotero Vineyards. The grapes were crushed and cold soaked for several hours to lightly extract color from the grape skins before gently pressing. The base wine was fermented and aged in a mix of stainless tank and neutral French oak barrels for 9 months. In spring of 2020 this cuvee was bottled by hand and went on to age for 30 months on its yeast lees en tirage (in bottle). Each bottle was riddled and disgorged by hand and a small dosage of 4 g/L was added. 1176 bottles produced.
Tasting Notes.
Pure aromas of alpine strawberry, tangerine zest, and sea air emerge from the mousse of this sparkling Rosé. Pale pink in color with mouthwatering flavors of crisp cherry, lime, and biscuit. This release has an added depth of fruit complexity that is showing beautifully upon release and will gain nuance with age.
Vineyard Notes.
Topotero Vineyard is a family-owned, organically farmed vineyard situated just 1.5 miles from the Pacific in Avila Beach. The maritime climate of this area has a heavy influence on the growing conditions of these vines. The combination of foggy mornings, sunny days, and breezy afternoons maintains the freshness of flavors and acidity while also enhancing the fruit profile we seek in pinot noir for sparkling Rosé. These blocks were planted in 2000 on ancient seabed with silty clay/loam soils.
