About us.

We craft single-vineyard sparkling wines made from Chardonnay and Pinot Noir grown along California's Central Coast. Defined by extreme proximity to the Pacific Ocean, expect complex wines that are delicious now and made to age.

A project exclusively dedicated to sparkling wine, Nicole Bertotti Pope and Lucas Pope founded Haliotide as a winemaker and viticulturist team in 2016. Nicole began her career at Domaine Carneros and has spent two decades specializing in cool climate winemaking on the SLO Coast. Lucas studied Viticulure at Cal Poly and has been developing and managing ultra-premium vineyards in the area since.

Together, they farm and source exceptional cool-climate fruit from boutique family-owned vineyards. The wines are made in the Tradional Method and spend 3-6 years aging “en tirage”.

Every vintage is made by hand from harvest and tirage bottling to riddling, disgorging, and labeling. It's a labor of love the team wouldn't have any other way.

We believe the connection of wine and art elevates the experience of both creative expressions.

Every vintage and vineyard is unique and so are the labels. Each Haliotide release depicts distinctive portrait photography by Petaluma-based artists, Michael Garlington and Natalia Bertotti. Acclaimed photographer, sculptor, and installation team, they develop fantastical costumes, characters, and scenes that are captured in a single straight shot on medium format film.
